Passion Cocktail
The original Passion comes from a book published in London in 1934 called 1700 Cocktails for the Man Behind the Bar by R. de Fleury. It combined equal parts Plymouth gin and passion fruit juice, accented with a dash of absinthe. I took inspiration from a London classic from 70 years later–the Dry Daiquiri–adding Campari and a flamed orange twist and, doubling down on the aughts London vibe, it’s definitely got the Pornstar Martini combo of passionfruit and vanilla, too.
INGREDIENTS
1½ oz. gin
¾ oz. passionfruit syrup
½ oz. lemon juice
½ oz. Campari
Scant ½ oz. vanilla syrup
5 drops saline
Absinthe, for rinse, optional
Garnish: flamed orange twist (trimmed and laid across or discarded)
ABV LEVEL
If rinsing coupe with absinthe, spritz with atomizer or rinse by pouring a little into the coupe and swirling around. Combine all other ingredients in a shaker, add ice, and shake for 15 seconds. Double strain into coupe. Heat a piece of orange peel (orange side) with a match and express oils over flame. Trim and lay across glass or discard.
