Spelling Bee Cooler

In honor of a spelling bee wherein Anne wins by correctly spelling chrysanthemum, I basically made a delicious iced tea beverage. Chilled chrysanthemum tea, Avonlea Fair syrup (with parsley, sage, rosemary, and thyme!), raspberry cordial, lime juice, and celery bitters make for an herbal, tart, cooling drink that makes you feel like you’re walking through a field of cut hay! And a measure of blended Scotch won’t go amiss here, if you want to fortify it!

INGREDIENTS

¾ oz. raspberry cordial
½ oz. lime juice
¼ oz. Avonlea Fair syrup
5 drops saline solution
5 dashes celery bitters
1-1½ oz. blended Scotch (optional)
5 oz. chrysanthemum tea, chilled

Garnish: “Avonlea Fair” herb bouquet, dried chrysanthemum flower


ABV LEVEL

Add first five ingredients (plus Scotch, if using), to a cocktail shaker. Add ice, seal, and shake for 5 seconds. Double strain into a Collins glass. Fill halfway with ice and add chrysanthemum tea. Add more ice to fill, leaving a little room for garnish. Gently slap a small bundle of herbs (parsley, sage, rosemary, and thyme!) and add to glass; Garnish with a dried chrysanthemum flower.
