Stone Fence Collins

The Stone Fence is a much-mythologized olde Yankee drink consisting of aged rum and hard cider. Supposedly Ethan Allen and the Green Mountain Boys drank a ton of Stone Fences before storming Ticonderoga. In this simple mix of ingredients, I saw the opportunity to play with a bit of anachronism and apply a nineteenth-century template (the Collins) to this eighteenth-century classic. 

INGREDIENTS

1½ oz. aged rum
1 oz. medium-dry Madeira
¾ oz lime juice
¾ oz.
pumpkin syrup
2 oz. dry hard cider, to top
Angostura bitters, for garnish
Lime wedge, for garnish


ABV LEVEL

Combine first five ingredients in a cocktail shaker. Add ice and shake for 15 seconds. Strain into a Collins glass and add ice. Top with cider and garnish with lime wedge and a couple dashes of Angostura bitters.
