Bali Bali

The Bali Bali, hailing from the Bali Ha’i at the Beach in New Orleans, is the lesser-known sibling of the Fog Cutter. At first I was stumped about how to bring all the various spirits, juices, and sweeteners into balance, but when it dawned on me that I could structure it like a 1950s Zombie, everything fell into place. I particularly love this presentation, especially if you can get your hands on a vintage tiki-style Collins like the Siestaware glass pictured.

INGREDIENTS

¾ oz. London Dry gin
¾ oz. Cognac
¾ oz. white rum
¾ oz. dark rum
1 oz. lime juice
½ oz. orange juice
½ oz. pineapple juice
½ oz. passionfruit syrup
½ oz. falernum
¼ oz. 5 spice syrup
1 dash Angostura bitters
5 drops saline solution

Garnish: mint, dehydrated orange, and a smoking cinnamon stick


ABV LEVEL

Combine all in a large mixing tin. Flash blend for 8 seconds with 1 scoop pebble ice. Dump into a Zombie glass or similar. Top with more pebble ice. Garnish with mint, dehydrated orange, and a smoking cinnamon stick.
