Mary’s cousin Colin believes he will always be ill, but Mary and Dickon bring him and his household back to life! Though this drink is non-alcoholic, I took inspiration from the John & Tom Collins, a family of drinks that sometimes called for genever as a base. Sort of a very complex strawberry-rhubarb lemonade, a nod to lemonades as one of the most important teetotal categories in drinks history.

INGREDIENTS

1 oz. non-alcoholic apéritif, preferably Ghia
¾ oz. rhubarb shrub
¾ oz. grapefruit juice
½ oz. strawberry syrup
½ oz. lemon juice
4 drops saline
Club soda, to top

Garnish: rhubarb ribbon in glass; dehydrated lemon wheel on a pick


ABV LEVEL

Prepare a Collins glass with a rhubarb ribbon arranged on the inside and add a few ice cubes to keep it in place; set aside. Combine all but soda in a cocktail shaker. Add ice and shake for 15 seconds. Pour about 1 oz. soda into bottom of prepared glass. Strain into glass. Add ice cubes and top with more 1½-2 oz. more soda. Garnish with dehydrated lemon wheel on a pick.
