Demerara Syrup

This is an all-purpose 1:1 demerara syrup. Not to be confused with its more viscous sibling, rich demerara, which features a 2:1 ratio.

INGREDIENTS

½ cup demerara or turbinado sugar*
½ cup water

*Sugar in the Raw is an easy-to-find brand


Yield: 1 scant cup

Combine ½ cup demerara or turbinado sugar and ½ cup very hot water in a small saucepan. Whisk rapidly to dissolve. Set over medium heat, and continue to whisk until sugar has completely dissolved. Allow to cool completely before storing in an airtight container. Label and date container. Keeps in fridge 4-6 weeks.
