Drink Divine

With its cider, perry, and sherry, Drink Divine seems more a descendant of wassail than anything else, especially with the bit about putting a “toasted biscuit” into it. (Represented in our recipe by the suggestion of serving with digestive biscuits!) To this simple mixture, I added ginger and allspice dram, but otherwise kept it simple; after all, the original recipe lives up to its name with no help!

INGREDIENTS

1 fresh lemon, cut into wheels
8 oz. dry cider
8 oz. perry
6 oz. amotillado or oloroso sherry
3 oz. Cognac
3 oz. ginger syrup
1½ oz. allspice dram


ABV LEVEL

Put lemon slices in a quart-sized jar or wide-mouthed bottle. Add all the other ingredients, seal, and gently turn the bottle upside down and rightside up several times to incorporate. Allow to meld in the refrigerator for four hours or overnight. Can be served chilled from the jar and fine-strained over ice, if desired, or strained into a small punch bowl with a block of ice and garnished with dehydrated apple and/or pear slices. Ideally served with whole-grain digestive biscuits.
