Ginger-honey Mixture

This very gingery “mixture” is so called because it’s not really a syrup, but more similar to something you might get at a juice bar.

INGREDIENTS

¼ lb. ginger
⅓ cup honey
½ cup boiling water


Yield: heaping ¾ cup

Wash ginger and chop it into little chunks. You should have 1 (scant) cup of ginger chunks, very loosely packed. Put the ginger chunks into a blender or food processor. Add about honey and boiling water. Using caution, blend thoroughly. Strain through a fine mesh sieve, pushing down on the solids to release remaining liquid (but don't drive yourself crazy!). It will look like chicken broth and that's okay! Label and store in the fridge.

Note: lasts for about 7 days in the fridge
