Ginger Syrup (Gigantic version)

This is the ginger syrup we use at Gigantic—it’s made by using ginger and water, blended and strained, as the base, giving it a very fresh, spicy flavor.

INGREDIENTS

2 cups ginger
Water
White sugar


Peel and roughly chop about ginger. Put ginger in a blender and add water until just covered. Strain out the solids and weigh the resulting liquid. Pour into a saucepan and add an equal amount, by weight, of sugar. Heat on medium-low, stirring often until all the sugar is dissolved. Bottle, date, and label; store in the fridge.
