La Pomme Fumée

Strong, stirred drinks featuring multi-spirit bases are all over The Savoy Cocktail Book. This one was particularly inspired by the Twelve Miles Out cocktail, which featured Calvados, Bacardi rum, and Swedish punsch, and was named for an American silent film that debuted in 1927. Ours is a smoky apple tribute to the stirred and strong drinks served at the Savoy, hence the name.

INGREDIENTS

1 oz. Calvados
1 oz. blended Scotch
½ oz. Swedish punsch
¼ oz. peaty Scotch
1 teaspoon
simple syrup
A small pinch of salt
Orange peel, for garnish


ABV LEVEL

Combine spirituous ingredients, simple syrup, and salt in a mixing glass. Add plenty of ice and stir rapidly for 20 seconds. Strain into a double rocks glass. Add a large ice cube. Express the oils from an orange peel onto the surface of the drink. Twist peel up into a nice shape and place it in the drink.
