Medford Bumbo

Bumbo, or “Bombo” is a rum sling sweetened, diluted spirit flavored with spices. Rum was a major force in eighteenth-century life, whether it was imported from the Caribbean (that was the best stuff) or produced locally in New England from molasses, the most famous of which was produced in Medford, Massachusetts. Like the whole toddy-sling family, Bumbo is among the nearest antecedents of the capital-C Cocktail.

INGREDIENTS

3 oz. aged rum

¼ oz. Madeira
1 oz.
ginger liqueur
1
½ oz. water, preferably distilled
Cold brew (optional), to sink
Coffee bean, for garnish
Lime zest, for garnish


ABV LEVEL

Note: makes two servings.

Combine rum, Madeira, ginger liqueur, and water in an 8 oz. jar and stir. Chill in the fridge for a few hours or overnight. Divide between two single rocks glasses or small earthenware cups. If you like, sink ½ oz. cold brew to the bottom of each cup. Grate coffee bean and lime zest atop before serving.
