Rattle-Skull

Typically I’d rename a drink like this or modify it with an adjective or place, but the original name is just too good, plus we’re staying pretty true to the traditional spec here. Long a favorite of mine, the Rattle-Skull improves on already delicious beer porter or brown ale by fortifying it with brandy (rum was also common) and creating a sweet-sour interplay with spiced brown sugar syrup and lime juice.

INGREDIENTS

1½ oz. brandy
¾ oz. lime juice
¾ oz. spiced brown sugar syrup
6 oz. porter
Candied ginger, for garnish
Nutmeg (whole), for garnish


ABV LEVEL

Combine brandy, lime and syrup in a 10-oz. beer or highball glass. Stir briefly. Top with 6 oz. porter. Gently stir to incorporate. Garnish with a piece of candied ginger on a cocktail pick and a grating of nutmeg.
