Spiced Brown Sugar Syrup

This spiced brown sugar syrup has deeply autumnal flavors and molasses notes. It served us well in Eighteenth-century Tavern Month (October 2021).

INGREDIENTS

½ cup brown sugar
½ cup water
2 star anise
1 cinnamon stick
1 nutmeg, broken into a few large pieces
A pinch of cayenne


Yield: approx. ¾ cup

Combine and brown sugar in a small saucepan. Add star anise, cinnamon stick, nutmeg, and cayenne. Feel free to add other favorite spices if you like. Bring to a boil and immediately lower heat. Simmer 10 minutes. Take off heat and cover. Steep about 4 hours. Strain out solids and store, refrigerated, in a jar until ready to use.
