Tequila Martini

This is an ode to the imaginary point in time, in this month’s period of interest (1900- 1919) when the prevailing Martini ratio was 2:1. Bright, briny fino or Manzanilla sherry works in perfect harmony with the blanco tequila, all of which is enhanced by a little salinity and citrus.

INGREDIENTS

2 oz. blanco tequila
1 oz. fino or Manzanilla sherry
2 dashes of orange bitters
1 bar spoon
“brine”
Lemon peel, for mixing
Olive, for garnish


ABV LEVEL

Combine tequila, sherry, bitters and brine in a mixing glass. Express the lemon peel over the mixture and add it to the mixing glass. Add lots of ice and stir for 20 seconds. Strain into a Nick & Nora glass or coupe and garnish with a Castelvetrano or other green olive on a pick.
