Acid-adjusted orange juice

Acid-adjusting is a process by which a less acidic fruit juice (such as orange or pineapple) are "adjusted" with acid powders in order to bring them to the acidity level of lemon or lime. We used acid-adjusted orange juice for a couple of our recipes in October 2024's Pumpkin Hollow theme.

INGREDIENTS

16 oz. fresh-squeezed orange juice
24 grams (about 1 Tablespoon plus 2 teaspoons)
powdered citric acid


Yield: 1 pint

Combine the juice and acid. Stir well to incorporate. Store in the fridge. Keeps for 8-12 days.
