Ginger-molasses syrup

We used this ginger-molasses syrup for October 2023’s Top’s Tavern theme.

INGREDIENTS

1 (2-inch) piece fresh ginger (~60g), peeled and sliced
1 cup (200g) turbinado sugar
1 cup water
½ teaspoon salt
1½ tablespoons (30g) molasses


Yield: 8 oz.

Combine turbinado sugar, water, and ginger. Bring to a boil, stir, and immediately reduce heat. Simmer for 10 minutes, stirring frequently and making sure sugar dissolves. Once it has dissolved, remove from heat and stir in the molasses. Allow to steep, covered, up to 4 hours and strain out solids.
