Bahama Mama
Drinks traveling under the "Bahama Mama" name have existed since at least the early 1960s, but known formulas date to the 1970s. Usually a combination of rums, lemon or lime, pineapple or and/or orange, grenadine, coconut in some form, and coffee liqueur, the drink in various forms has been popular from Caribbean resorts to chain restaurants for over fifty years.
INGREDIENTS
1¼ oz. Jamaican rum*
1½ oz. acid-adjusted pineapple juice
½ oz. coffee liqueur
½ oz. coconut cream
¼ oz. grenadine
* you can replace ½ oz. of the Jamaican rum with high-quality coconut rum if you like
Garnish: ½ oz. aged 151 rum float, pineapple fronds (or what you will!)
ABV LEVEL
Combine everything in a cocktail shaker and add ice. Seal and shake vigorously for 15 seconds. Strain into a Collins or Mai Tai glass and top with pebble ice. Float ½ oz. aged 151 on top and garnish with pineapple fronds; a maraschino cherry is also common.
