Fig Syrup

This fig syrup added “leather armchair” notes of dried fruit and tobacco to our cocktails in November 2022. It’s a “rich” syrup, so keep that in mind if you’re looking to sub it into other recipes.

INGREDIENTS

1 cup (200g) granulated sugar
½ cup (115g) hot water
1 cup dried figs, preferably Turkish, coarsely chopped


Combine sugar and water in a saucepan. Whisk rapidly to start dissolving sugar. Set heat to medium-low and stir occasionally until sugar is completely dissolved. Add figs and stir to combine. Continue to heat for 5-7 minutes. Cover and let sit overnight to steep (in a cool spot or in fridge). Fine strain off the solids the next day. (I bet they'd be great on ice cream or in a baking project!) Bottle, label, and store in fridge. Use within 4-6 weeks.
