I have been playing around with a tequila-based version of Philadelphia’s own Clover Club for over a year now and finally landed on this beauty. An unusual sort-of reverse dry shake technique makes the use of jam and desire for perfect egg white texture achievable.

INGREDIENTS

1½ oz. blanco tequila
½ oz. fino or Manzanilla sherry
½ oz. lime juice
1½ Tablespoons strawberry jam
½ oz. egg white
Amaro, for garnish (optional)


ABV LEVEL

Combine tequila, sherry, lime juice and jam in shaker. Add ice and shake vigorously for 15 seconds. Double strain using a Hawthorne and fine strainer into a glass (or spare shaker, if you have one), working the jam pulp through the fine strainer using a barspoon. Add egg white to the strained mixture along with a single ice cube. Seal shaker and shake hard for 10-15 seconds. Fine strain into a coupe. If you like, try this garnish: using a dropper, apply amaro (or bitters) “dots” to surface of egg white and drag a cocktail pick through it to create a circle of hearts.
