Pineapple Cordial
This pineapple cordial added a tropical note to our drinks during Calfornia Gold Rush Month in March 2023.
INGREDIENTS
⅓ cup (70g) turbinado sugar
⅓ cup (70g) white sugar
⅓ cup (75g) hot water
⅔ cup (160g) pineapple juice
¼ teaspoon kosher salt
Yield: 10 oz.
Stir together sugars and hot water in a small saucepan and stir to begin dissolution. Add pineapple juice and set heat to medium-low. Stir near constantly until sugar and salt are completely dissolved. Remove from heat and allow to cool. Store in the fridge.
