Rich Simple Syrup

Rich simple syrup is a useful ingredient for any bar. The 2:1 ratio allows you to impart sweetness and texture without much dilution.

INGREDIENTS

½ cup white sugar*
¼ cup hot water, just off the boil

*you can use pure cane sugar, but may need to heat it a bit on the stove, as it doesn’t dissolve as easily as white sugar. It also has a slightly less neutral flavor than white sugar.


Yield: about ½ cup

Combine sugar and hot water in a heat-safe container or bowl and stir until completely dissolved. Heat on low until just dissolved if necessary. Date, label, and store in the fridge.
