Roasted Strawberries

I took a page out of the pastry chef’s playbook and roasted lightly-sweetened strawberries to concentrate the flavor. Used in our Roasted Strawberry Daiquiri (June 2022)—but equally good over vanilla ice cream.

INGREDIENTS

1 lb. roasted strawberries, stemmed and quartered
2 Tbsp. Granulated sugar
2 Tbsp. demerara syrup
⅛ tsp. Kosher salt


Preheat to 300°. Toss the strawberries with the other ingredients and place in a 13”x9” baking dish. Roast for 1 hour, stirring occasionally. Allow to cool. Store in an airtight container in the fridge.
