Salted “sour patch” sugar

This salted “sour patch” sugar mixture was invented to garnish our Toreador in a month of tequila cocktails inspired by the Café Royal Cocktail Book.

INGREDIENTS

150g sugar
30g kosher salt
6g powdered citric acid


Combine all in a nonreactive bowl and mix until completely integrated. Store in an airtight container.
