Smoky Beehive Martini

This is one of those great drinks that sprang from the unique mix of ingredients on this month’s supply list. The resulting cocktail is a delightful 2:1 mezcal-and-gin martini with blanc vermouth, saline, optional spicy note, and a touch of honey. Keep a bottle of these in the freezer for when an afternoon outdoor hang turned into an all-evening affair and you suddenly have several thirsty friends at your house.

INGREDIENTS

8 oz. mezcal
8 oz. dry gin
8 oz. blanc vermouth
1½ oz. honey syrup
½ teaspoon saline solution
5 oz. water
Habanero tincture to taste*

Garnish: expressed lemon twists

*start with about 12 drops for this size batch


ABV LEVEL

Makes about eight 4–oz. servings.

Combine all in a nonreactive container. Stir. Bottle and freeze until ready to serve. Serve over ice in rocks glasses or up in a coupe or Nick & Nora glass. Garnish with expressed lemon twists.
