Primavera Aperitivo Bar

With just a few supplies, you can set your guests up to enjoy a variety of aperitivo classics. Batching the base of rabarbaro amaro and blanc vermouth makes it easy to make a Milano-Torino, Americano, or Negroni Sbagliato with a decidedly springy vibe. After the party, if you’ve got leftover batched base, mix two parts base with 1 part gin or Mezcal for a nice Negroni variation.

SERVING SUGGESTIONS

For the batched base
15 oz. rabarbaro
15 oz. blanc vermouth

For the bar set-up
Dry sparkling wine
Club soda

Garnish: lemons and oranges for peeling, orange wedges or slices, and lemon wheels


ABV LEVEL

On a table, set out a bottle of the batched base. Put dry sparkling wine and club soda on ice. Set out an ice bucket with a scoop or tongs, and a bunch of Collins and rocks glasses. Arrange garnish on little plates or in bowls. Don’t forget to put out a vegetable peeler so people can cut peels! A sign outlining the following drinks is a good idea. (But also letting people riff is cool, so long as they have some idea of how much should go in each drink!)

Milano-Torino – 3 oz. batched mix over ice, rocks glass, orange wedge or a twist

Americano – 3 oz. batched mix over ice in a Collins glass, top with soda, lemon twist

Negroni Sbagliato – 3 oz. batched mix over ice in a rocks glass, top with sparkling wine, lemon wheel or orange slice
