Strawberry meringue

I developed this strawberry meringue to top an Edwardian punch for April 2025’s Secret Garden theme. I like how it’s like a pink cloud floating on a fruity punch!

INGREDIENTS

2 medium egg whites
2 Tablespoons confectioner’s sugar
1 Tablespoon dehydrated strawberry powder
¼ teaspoon lemon juice


In a small bowl, combine sugar and strawberry powder. In a separate, medium-sized bowl, combine egg whites and lemon juice. Whip until medium-soft peaks form. With beater running, slowly add in strawberry-sugar mixture until fully integrated. Don’t overbeat!
