White Sands Champagne Cobbler

A true Edwardian dream drink, this Champagne Cobbler has sloe gin, raspberry cordial and dry sparkling wine, garnished with little scoops of raspberry sorbet and vanilla ice cream and raspberries and/or currants! It’s named after the fancy hotel where Anne gives a reading of The Highwayman (published in 1906, and included in the 1985 CBC film, not the book!).

INGREDIENTS

4 drops saline solution
½ oz. raspberry cordial
¾ oz. sloe gin
4 oz. Champagne

Garnish: small scoops of raspberry sorbet and vanilla ice cream, currants and/or raspberries


ABV LEVEL

Add the first three ingredients to a footed glass. Fill halfway with pebble ice and stir. Add 4 oz. Champagne, stir gently. Top with more pebble ice and add a straw. Garnish.
