1950 Zombie

Adapted from Ned King (Gigantic, Easthampton, MA), based on Don the Beachcomber

Ned helped me immensely in planning this month, including bringing this post-WWII Zombie to my attention. Though different from the 1930s Zombie, this version reads as a direct descendent of Planter’s Punch. I’ve made a couple of changes to Ned’s spec based on what we have on hand this month.

INGREDIENTS

¾ oz. overproof aged rum (optional, see below)
¾ oz. aged rum (increase to 11⁄2 oz. if you don’t have overproof)
¾ oz. rhum agricole blanc or white rum
¾ oz. lemon
¾ oz. lime
¾ oz. pineapple juice
¾ oz.
“apriçao”
½ oz.
rich demerara syrup
½ teaspoon
spiced Angostura bitters
2 pineapple fronds, for garnish
1 cinnamon stick, for garnish


ABV LEVEL

 

Combine all in a blender tin or shaker* and add 1 cup pebble (or crushed) ice. Flash blend** and dump mixture into a Zombie glass or Collins glass and add pebble (or crushed) ice, almost to the top. Add a straw and garnish with pineapple fronds. Mound a bit more ice on top. Carefully light cinnamon stick so it smokes and stick it in the drink before serving.


* If using a shaker, do a hard, short shake with the pebble ice -- about 5 seconds
** Flash blend = blend using a milkshake blender 8-10 seconds
