Band of Horse Thieves

Tom Bullock’s Martinez-like Horse Thief Cocktail is perfect as is. What I decided on was to make this a batched version of his original spec, frozen until very cold, and served in frozen, absinthe-spritzed glasses à la Sazerac. I find the result is exceedingly elegant.

INGREDIENTS

9 oz. Old Tom gin
3 oz. sweet vermouth
3¾ oz. water
Absinthe for spritzing / rinsing


ABV LEVEL

Combine Old Tom gin, sweet vermouth and water in a ~20 oz. jar Freeze for 6+ hours. Freeze single rocks glasses 2+ hours ahead of time. Before serving, spritz frozen glasses with absinthe using an atomizer (or rinse glass with absinthe). Pour 3-4 ounces of mixture in each. Serve immediately.
