Dream of St. Louis

An egg-and-cream-laced sour that hews pretty closely to Tom Bullock’s Dream. We’ve swapped in absinthe for the crème de menthe and, with the addition of our cordial, we’ve given the whole thing a Creamsicle, nay Dreamsicle flavor profile.

INGREDIENTS

2 oz. Old Tom gin
1 oz.
vanilla-orange cordial
½ oz. lemon juice
½ oz. egg white
½ oz. cream (added in step 2)
Absinthe for spritzing / rinsing
Orange peel, for garnish


ABV LEVEL

Spritz (or rinse) a coupe with absinthe; set aside. Shake gin, cordial, lemon and egg white with two whole cubes for 30 seconds. Crack a couple ice cubes into smaller pieces apart and add them to your shaker along with 1⁄2 oz. cream. Shake hard for 30 more seconds. Double strain into prepared glass. (If you want a lot of foam and don’t mind some tiny ice pieces, strain using just a Hawthorne strainer.) Garnish with an orange peel that’s been squared off, with small diagonal slits on either side to create an “orange arch.” Serve immediately.
