New Year’s Eve 1951

Call me old-fashioned, but I love Champagne for New Year’s. Is there anything more classic? Though I do like classic Collins-esque Champagne cocktails like the French 75 (especially the Cognac-based kind), a stirred, spirituous base topped with bubbles is more my speed. This one is somehow wintry and tropical all at once, and ever-so-festive.

Jack Frost Fizz

The very first cocktail recipe in William Schmidt’s sprawling entertaining and drinks manual is the Jack Frost Whiskey Sour. It calls for “apple whiskey,” cream, a whole egg, sugar, lemon, and soda. In actuality, it’s a Fizz and our version plays that up and splits the spirit and sweetener elements across a few different spirits and liqueurs. Juniper, apple, fig, and honey come through in this creamy, Flip-adjacent Fizz.

Motor Wagon Cocktail

A stirred drink from The Hoffman House Bartender’s Guide (1905), the Automobile Cocktail consists of equal parts Scotch, Old Tom gin, and Italian vermouth, plus a little gum syrup and orange bitters. I took this template and subbed in apple brandy for the Scotch, using alpine amaro in place of bitters, and sweetening with fig syrup. It’s Martinez-esque, but feels perfect for November with apple and pronounced piney notes. “Motor wagon” was a term used by some early car makers.

1888 Martinez

The Martinez and other early “Martinis,” were a lot like the first Manhattan recipes. Many such recipes called for a 2:1 ratio of vermouth to gin–which you are welcome to try! I went with 1:1 here. The gin, of course, would have been in the sweetened Old Tom style or Holland gin, aka genever. Lemon is traditional, but I went with an orange twist, wrapped around a cherry for visual interest.

Barnstable Punch (for a crowd)

As you may have noticed, I favor aged spirits in most things and especially in punches. But a great gin punch is a welcome addition to any gathering, so I’ve done the math on my popular Barnstable Punch from last year’s Yuletide class. You can use just London dry gin, just Old Tom gin, or a mix of both as I’ve suggested here, just be aware that you may want to adjust to taste.

Band of Horse Thieves

Tom Bullock’s Martinez-like Horse Thief Cocktail is perfect as is. What I decided on was to make this a batched version of his original spec, frozen until very cold, and served in frozen, absinthe-spritzed glasses à la Sazerac. I find the result is exceedingly elegant.

Dream of St. Louis

An egg-and-cream-laced sour that hews pretty closely to Tom Bullock’s Dream. We’ve swapped in absinthe for the crème de menthe and, with the addition of our cordial, we’ve given the whole thing a Creamsicle, nay Dreamsicle flavor profile.

Queen of Scots

When I was developing this drink for a potential slot on Gigantic’s 2020 spring menu (sadly reopening was postponed until 2021), I kept thinking of the nursery rhyme “Mary, Mary, Quite Contrary,” because it’s all about spring flowers and honeybees. And because I’m about 500 years old. Anyway, this song is probably about Mary Tudor, but it may also be about Mary Stuart, commonly known as the Queen of Scots, who was eventually beheaded by her cousin Elizabeth I.
