Queen of Scots
When I was developing this drink for a potential slot on Gigantic’s 2020 spring menu (sadly reopening was postponed until 2021), I kept thinking of the nursery rhyme “Mary, Mary, Quite Contrary,” because it’s all about spring flowers and honeybees. And because I’m about 500 years old. Anyway, this song is probably about Mary Tudor, but it may also be about Mary Stuart, commonly known as the Queen of Scots, who was eventually beheaded by her cousin Elizabeth I.
INGREDIENTS
1 oz. blended Scotch
1 oz. aged Old Tom gin, preferably Barr Hill Tom Cat
1 oz. lemon juice
½ crème de violette
½ oz. honey syrup (1:1)
½ oz. egg white
Peychaud’s bitters, for garnish
ABV LEVEL
Combine all ingredients in a shaker tin. Seal so that the circles of two tins are concentric (i.e. not at an angle like you normally would). Shake without ice for 10 seconds. This is called “dry shaking.” Open shaker, add ice and shake again to chill the drink. Double strain (Hawthorne and fine strainers) into a coupe. Garnish with a pattern of Peychaud’s bitters on top.
