Tailor’s Flip

I wanted to do a fizz for this month (I do so love a fizz!), but all the combos I tried fell flat! Instead, I decided to eliminate the soda element and incorporate a whole egg instead of just egg white, making it a classic nineteenth-century flip. The resulting cocktail, with smoky, spiced, and tropical flavors is an excellent dessert drink befitting any cold-weather gathering.

INGREDIENTS

½ oz. blended Scotch
½ oz. peaty Scotch
½ oz. Irish whiskey
¼ oz. Drambuie
¼ oz. banana liqueur
¼ oz. honey syrup
4 drops saline solution
1 whole egg

Garnish: grated coffee bean


ABV LEVEL

Combine all in a cocktail shaker. Seal and dry shake (without ice) for 10 seconds, holding the shaker together firmly. Open shaker and add ice. Shake for 10 additional seconds to chill and dilute the mixture. Double strain into a small footed glass. Garnish with a generous smattering of freshly grated coffee bean.
