Royal Pavilion Punch
This punch royale is named for the beachside retreat in Brighton commissioned by George, the spoiled young Prince of Wales. Based on the prince’s preferred drink, Regent’s Punch, this one balances tropical rum with green tea and lemon, all topped off with Champagne.
INGREDIENTS
1½ oz. pineapple-infused rum
¾ oz. strong green tea, chilled
¾ oz. lemon syrup
½ oz. lemon juice
2 oz. Champagne, to top (no more!)
Pineapple fronds, for garnish
ABV LEVEL
Combine first four ingredients in a shaker. Fill two-thirds of the way up with ice. Seal and shake vigorously for 15 seconds. Strain into a Collins glass. Add ice. Top with Champagne. Add a straw and garnish with two pineapple fronds.
