Club Pimm’s Royale

I wanted to demonstrate a fancy application for our Club Pimm’s, and I immediately thought of doing a Pimm’s Cup Royale, i.e. topped with Champagne. I also wanted to integrate some of the traditional fruit and mint that are used in Pimm’s Cups and decided a Cobbler format would be the perfect vehicle. Served over crushed or pebble ice, our Pimm’s Royale is, naturally, garnished with abandon.

INGREDIENTS

2 oz. Club Pimm’s
¾ oz.
cucumber-lemon shrub
2 orange half-wheels, plus 1 wheel for garnish
8 mint leaves, plus a bouquet for garnish
Berries,* for muddling, plus more for garnish (optional)
Cucumber slice or spear, for garnish
2 oz. Champagne or dry sparkling wine, to top


*such as 2 strawberries or 5 raspberries


ABV LEVEL

Combine orange half-wheels, mint leaves, and berries (if using) in a shaker tin with shrub. Muddle gently. Add Club Pimm’s and fill shaker two-thirds with ice. Seal and shake hard for 5 seconds. Double strain into a footed glass or Collins glass. Fill to top with crushed or pebble ice. Add a straw and garnish with orange wheel, cucumber, berries (if using), and a mint bouquet (slap mint before inserting in glass to release aromas). Mound more crushed or pebble ice on top.
