Glorious Revolution

I came up with this drink while I was in Holland in October 2019. I spent a week there learning the history of genever and the current state of the industry for a story I was writing for Saveur. I came out of that trip ever more fond of genever. Chocolate, sugar, pineapple, lime and nutmeg give this egg white Sour a distinctly tropical edge. As for the base spirits, I’ve explained the genever, but why the Scotch? After much conflict during the seventeenth century, England gives James II the boot in favor of his daughter, the protestant Queen Mary, and her husband, William of Orange (the Netherlands). Mary was a Stuart by blood, the great-great-granddaughter of Mary Queen of Scots, and that’s why I’ve chosen the Scotch here.

INGREDIENTS

1 oz. blended Scotch
1 oz. genever*
¾ oz. fresh pineapple juice
½ oz. lime juice
½ oz. crème de cacao
½ tsp.
rich demerara syrup
½ oz. egg white
Nutmeg, for garnish


ABV LEVEL

Combine all in shaker without ice. Dry shake for 10 seconds, holding shaker together tightly. Open shaker, add plenty of ice, and shake vigorously for 15 seconds. Strain into a coupe and garnish with freshly grated nutmeg.

* Make sure it’s an oude-style genever or corenwijn that’s based on 40% or more malt spirit. I have also split the genever in half between a 100% malt spirit genever, such as Notaris, and a more botanical, but still high-malt-spirit genever, like Rutte Old Simon.
